Heidi’s Quick Sloppy Joe Mix on the grill

Sloppy Joe’s were one of our kid’s favorites while they were growing up – and these days our grandchildren have continued the “tradition”.  Many years ago, Heidi refined it down to its simplest form and could knock out a quick meal they would welcome in about 20 minutes total preparation time using the stove-top and a skillet.  It works just as well on the grill, but you need about 5 more minutes to pre-heat your cast ironware.

Ingredients:

1 pound ground beef
1 med. onion, chopped
Approximately 1/3 cup of BBQ sauce
Approximately 1/3 cup of catchup
½ large bell pepper, finely chopped
1 stalk celery, finely chopped *optional
Salt and pepper and garlic powder to taste
A little chili powder and cumin never hurt anything, but… *optional

Directions:

Pre-heat cast iron skillet on the grill.
Brown the ground beef with the onion and bell pepper.  Drain off fat if necessary.  Add the remaining ingredients and simmer for 10 minutes or so.

Note: If mixture is too sweet, add a tbsp of prepared mustard.  Also, guess I should admit those “optional” items are my ideas. 😉

Serve on hamburger buns with French fries and/or coleslaw on the side, then listen to the “yummy” sounds. 8)
